Greek Style Quesadillas

Recipes

Ingredients:
6-8 tortillas (whole wheat, gluten free - brown rice, spelt or Ezekiel - your choice)
1 Tbs cumin
1 Tbs extra virgin olive oil1 avocado
Black beans
Spinach (or any other leafy green)
½ cup feta cheese (cow's milk, goat or sheep feta)
1 small red onion or hing
1 red pepper
Olives (optional)
1 cup fresh cilantro, chopped
Lime juice
½ cup of salsa of your choice


Directions:

  • Saute onions in pan with some olive oil. Make sure the heat is low.
  • Add red pepper, cumin and black beans.
  • Place your tortilla in a pan and allow to get toasty on one side, about a minute or so.
  • Flip the tortilla and start building.
  • Add your cheese, followed by onions, peppers and black beans.
  • Add spinach and avocado. Sprinkle with cilantro and add salsa.
  • Squeeze some lime juice over the filling.
  • Fold tortilla over onto itself to form a half moon.
  • Give it one last flip to make sure it is hot and all melted.

You may use other veggies inside like:

  • zucchini
  • butternut squash

  • mushrooms
  • cooked broccoli
  • kale
  • collard
  • cooked cauliflower
  • jalapeno ... etc.
