Italian Almond Biscuit

A sure-fire hit with your friends, these delicious Italian gluten, sugar and dairy free amaretti biscuits will be a family favourite.

Ingredients:

  • 1kg Almond meal
  • 480g xylitol
  • 1 vanilla bean – to remove the seeds, run a small sharp knife down the centre of the bean, open it up and scrape the seeds out of the pod
  • 1 whole egg or Orgran No Egg powder
  • 4 egg whites

Method:

  • Preheat oven to 180 degrees.
  • Beat eggs.
  • Combine a small amount of xylitol with the vanilla bean seeds.
  • Combine all ingredients.
  • Mix by hand & roll into balls (30g each) and use your index and forefinger to flatten slightly.
  • Bake till golden brown at 180 degrees for approximately 15-18min
