A sure-fire hit with your friends, these delicious Italian gluten, sugar and dairy free amaretti biscuits will be a family favourite.
Ingredients:
- 1kg Almond meal
- 480g xylitol
- 1 vanilla bean – to remove the seeds, run a small sharp knife down the centre of the bean, open it up and scrape the seeds out of the pod
- 1 whole egg or Orgran No Egg powder
- 4 egg whites
Method:
- Preheat oven to 180 degrees.
- Beat eggs.
- Combine a small amount of xylitol with the vanilla bean seeds.
- Combine all ingredients.
- Mix by hand & roll into balls (30g each) and use your index and forefinger to flatten slightly.
- Bake till golden brown at 180 degrees for approximately 15-18min
